Brown Butter Nutella Stuffed Cookies
As a society we like things on a stick, things that are fried and things that are STUFFED!
The idea of something stuffed inside of something else is a simple but exciting idea. It's a mystery and a surprise.
You have something already delicious, like a doughnut, a potato or a turkey and then you take these things to a whole new level. You stuff the doughnut with jelly, load up the potato and then of course there is the ingenious idea of stuffing a turkey with a chicken and a duck!
You have made something new! You have taken something and not just made it the best it can be, but even better. You have STUFFED IT!!
Now let's talk about cookies. We all like cookies and many times I judge my cookies like I do my books...by its cover of course.
I look at the outside, I see if it's thick or thin, smooth or bumpy. And far before I bite into it I have made a certain judgement about this cookie.
If it's too thick it probably won’t be making the favorites list. Too many nuts and it's going on the saddest list of all, the "do not make, even though I love cookies" list.
But sometimes you have to bite into a cookie before you can even begin to understand it. You need to see the depths of its little Nutella filled soul and see what it has to offer inside and out before you can possibly begin to say if your love together will last forever or not.
And so I bring you a mysterious little cookie. A brown butter chocolate chip nutella stuffed cookie. A cookie with a deep nutty flavor from browning the butter and best of all a cookie that is stuffed with Nutella.
It couldn’t get better.
RECIPE:
Based on : Ambitious Kitchen
1cup Nutella
1 cup unsalted butter
2¼ cups all-purpose flour
1¼ tsp baking soda
1/2tsp Kosher Salt
1 cup light brown sugar
½ cup granulated sugar
1 large egg plus 1 egg yolk
2½ tsp vanilla extract
1 tbsp greek yogurt
1 cup dark chocolate chips
Place tsp size dollops of Nutella onto parchment paper, a silpat, or tin foil sprayed with cooking spray. Approx 35 dollops. Place in freezer while preparing the dough. Put butter in a small skillet and cook on a medium high heat until browned, 5-8minutes and then let cool. Combine browned butter and sugar in a mixer and mix until well combined. Add the eggs, vanilla and greek yogurt to the butter and sugar mixture and mix until just combined. Add the salt, baking soda and flour and mix till combined. Add in the chocolate chips and mix gently until well distributed. Cover dough and refrigerate for 30minutes. Grab a 1.5-2inch ball of dough and flatten in your hand, add 1 now frozen dollop of Nutella to the center and close the dough around it so the Nutella is in the center of your cookie. Pinch top of the dough ball to rough it up and place on a cookie sheet. Bake at 350degrees for 10-12minutes
Makes 35-40 cookies
